Juan Manuel Barrientos Valencia, known as “Juanma” to his fellow Colombians, is the creator and founder of more than a dozen restaurants and bars. In April 2021, he became the first chef to lead a Colombian cuisine restaurant, elcielo Washington, DC, to a Michelin Star. Three consecutive times, he was the youngest chef named to San Pellegrino’s list of Latin America’s 50 Best restaurants.
Leveraging his creativity, eye for design, and guest service experience, Juanma opened elcielo Hotel Medellín in the city’s trendy El Poblado neighborhood in March 2021.

elcielo Restaurant
With branches in Medellin, Bogota, Miami, and Washington DC, elcielo Restaurant offers a signature cuisine restaurant based on neuroscience applied to local products. All restaurants serve tastng menus that seek to stimulate the senses. Inspired by Colombian cuisine, the chef uses a mixture of ancient and modern techniques to highlight Colombian flavors. Juan Manuel Barrientos reinvents his tasting menus every month and a half.
The hotel also features a bar and Bistro restaurant, and a à la carte restaurant with a casual atmosphere.
Apart from elcielo, Juanma has several restaurants and bars in Medellín. These include La Serenissima (pizza), Cuon (Asian food), and Kai (vegan).

The 28 suites at elcielo are furnished with a king-size bed. Among the room details are marble floors, wood paneled walls, designer fixtures, work desk, security box, television, and Egyptian cotton linens.
